Blackbeans make a really nice chocolate dip, and you can use the water from a can of chickpeas to whip into a mousse! Just be sure to serve immediately after making it, particularly if you don't have any corn starch to help it hold it's shape, it will fall within a couple hours otherwise. They call that water "aquafabba" and you can make your own by soaking 2.5 cups of chickpeas in water in the fridge for several days after cooking them on the stove.
