Made another batch of flatbread today, and had asked my daughter what herb to throw into it this time when she said "nettle". Requesting a finer grind than the tea level we have in the tub. So this morning I took out the mortar and pestle and threw three tablespoons of nettle into it, which roughly ground down to one tablespoon and tossed it into the mix. I then promptly forgot the baking powder and wouldn't remember till I was nearly done creating all the individual little balls of dough! That's the second time I've forgotten the baking powder, but as evidenced in this pic, it isn't exactly necessary either. It's a nice-to-have as it makes the entire piece a little fluffy and a little lighter, but other than that, it really isn't necessary to the recipe.

The nettle is great for both liver and kidney support. It's just generally a good body tonic overall, but digestive and urinary systems are high on the list. It is also metal-chelating! A key nutritional/medicinal quality we want in our diets these days!
